Founded in 2020 by two bartenders from New York City, January Spirits makes a gin, an amaro and this Genepy. Made only once a year, the process to make it is long. First, steeping green herbs in high proof spirit for 2 weeks before straining those herbs and adding 27 more to get the final flavor profile before redistilling, proofing, sweetening with NYS Honey and resting in Sauternes Barrels for 3 months before bottling.  A labor of love!
