Based in New York's Hudson Valley, Hillrock is bringing back to the tradition of Grain Growing and whiskey production lost to Prohibition nearly 100 years ago. Led by legendary Master Distiller Dave Pickerell, they are making some of the most profound whiskeys in New York if not the entire United States. This particular Bourbon was aged in barrels with two different char levels, one after the other. We were able to select a single barrel that we liked for our Old Fashioneds at Kindred Fare and also sell it at the shop. So this bottling is one of a kind!
