Hillick & Hobbs is the Finger Lakes label of famed winemaker Paul Hobbs. In 2013, Hobbs purchased a plot of land on a steep slope on the southeast side of Seneca Lake. Clearing the land, planting the vines and waiting for them to bear fruit suitable for quality wine took nearly a decade, but they were worth the wait. Winemaker Lynne Fahy has taken these wines to another level with an ethereal quality that is paired with a concentration of fruit that is often found in the Mosel. Ripe orchard fruit, citrus and flinty mineral all meld with sweet herbs and baked shortbread.
