Six Eighty Cellars was founded on the west side of Cayuga Lake in 2020. Six Eighty is a reference to the distance from the bottom of the lake to the uppermost point of the vineyard. They focus on using alternative aging vessels and other unexpected styles. This just off dry style is full of Meyer Lemon, wet stone and a savory streak.
