Lustau makes San Emilio from 100% Pedro Ximénez grapes, which are dried under the Spanish sun until they become almost raisin-like, concentrating their natural sweetness. The wine then ages for an average of 12 years in Jerez de la Frontera. Intensely rich and velvety, with layers of fig, raisin and date and a remarkably long finish. Pour a little alongside blue cheese or chocolate dessert, or take the easy route and drizzle it straight over vanilla ice cream.
