There are over 500 small distillers in Haiti making Clairin, an unaged Rum from raw sugar cane. The Spirit of Haiti brings together a handful of these small producers under one label, bottling each individually to showcase the vast diversity in the flavors produced in this funky cousin to Rhum Agricole. Using three sugar cane varieties, boiled together to preserve the natural flavors and then fermented using the dunder from the previous distillation to get deep, rich flavors. There's a pretty, smoky sweetness here.
