Six Eighty Cellars was founded on the west side of Cayuga Lake in 2020. Six Eighty is a reference to the distance from the bottom of the lake to the uppermost point of the vineyard. They focus on using alternative aging vessels and other unexpected styles. One of only a handful of producers making Chenin Blanc in the Finger Lakes, there's is classic with lots of green apple, lemon zest and a pretty, waxy texture.
